Quinoa - 5 Simple Recipes That Get Me Through the Week

Image
Quinoa has been a favorite staple of mine. It is an incredible versatile food and is packed with a huge amount of nutrients. Not only is it good for you and versatile, it’s incredibly easy to make. I usually make a few containers of it earlier in the week in the rice cooker and set them in the refrigerator until I’m ready to use it. Quinoa has also replaced my pasta dish the night before a long run. It is incredibly gentle on my sensitive belly. just waiting for me to use it I’m going to share with you my favorite 5 Quinoa Recipes Roasted Veggies over Quinoa This is incredibly easy - just choose whatever veggies you enjoy or have on hand - roast them in the oven with a bit of olive oil or coconut oil and some salt then top over the quinoa. Most of the time I don’t even warm up the quinoa if I’ve had it refrigerated because the head from the roasted veggies will warm it up for sure. Sometimes I’ll get fancy and add some broiled haddock or tilapia to it, but most of...

(Wax) Bean Salad & An Inspired Recipe

Image
The garden is begining to bust out the wax beans which means I get to try out some fun new recipes. Of course I turned to my favorite cookbook- Pinterest - for ideas. I found this incredible recipe and I had almost everything with the exception of the green onions and parsley - so I just omitted them and I didn't have dijon mustard which I substituted regular yellow mustard. It was incredible! If you like tomatoes, goat cheese and wax beans, I think you should definitely make this. The best part - Ward is not a fan of goat cheese or tomatoes so it was ALL MINE! Next up, I was inspired by Heather's Eggplant Mushroom Lentil Burgers the other day, but wasn't feeling  the burger part.  So I opted to make an Eggplant, Mushroom, Roasted Red Pepper Pizza instead.  I had two pizza crusts to use up so I made the kids a cheese one and made myself the delicious pizza.  Ward was missing, so he completely missed out.  Ingredients: - 1/2 of a baby e...

CLICK with Summer (+Giveaway)

Image
Awhile back I reviewed Mocha CLICK .   CLICK can be enjoyed hot or cold and I did just that.   It can be enjoyed for pre-workout/post-workout or a mid-day pick-me-up.   Anyway you drink CLICK, it is just enjoyable.   Recently, I was sent the Vanilla Latte CLICK package - complete with canister, blender bottle and CLICK Bondi band.  I wasn’t sure if I’d be a fan of this flavor, but it is absolutely delicious.   Because it’s summer, I’ve only been enjoying it cold.   After my solo 15 miler , I joined the girls for some beach time and brought along an Iced Vanilla Latte.    CLICK is quick to make.   I just add water, a scoop (or two) of CLICK, some ice cubes, screw on the cap and shake.   In addition to being quick, it’s a refreshing drink as well.   You can get creative and try out different combinations.  One of my favorites was: If you'd like to try out CLICK, you can go here to try out...

Spicy Slaw

Image
It's summer (yay!) and I've been craving a sweet and savory kind of cole slaw for a few days now.  I love the fresh, crispness of a just made slaw and I find it incredibly filling.  Yesterday when I was at the grocery store I grabbed one of my favorite pre-shredded slaw mixes - with broccoli, cauliflower, carrots and red cabbage.    But what I forgot to get was my favorite dressing.   Desperate to figure something out with what I had on hand, I whipped together a quick little dressing that really pleased me.  It was light, sweet, hot.  Perfect.   My secret ingredient.  Actually, this "find" is turning into my secret ingredient in quite a few items lately.  I don't know what I did without this jar of hotness before.   And since the kids didn't want any and Ward was at work, I was sure to enjoy every last bit of it at dinner tonight.  Yes.  It was that good.   quite satisfying and I didn't h...

Strawberry Rhubarb Puffs

Image
It's rhubarb time (well, in Maine anyway) and Ward and I are slightly addicted to rhubarb.  We love just about anything with rhubarb - jelly, muffins, crisp, pie.   Lucky for me, Stacy hooked me up with 10 pounds of rhubarb.  Yes, I really do love it that much!  My goal for the day was the make rhubarb yummies and that I did.   I started off with an experiment.  I was craving some kind of breakfast yumminess but didn't really know what exactly that was.   The only requirement was that whatever I made had to have rhubarb in it.  I also wanted whatever I made to be quick.  I didn't have a lot of time because I was going to be heading out for a run shortly.   A quick glance in the refrigerator revealed some strawberries (that really needed to be used right away!)  and canned biscuits.  Those I could use for sure.  Now we're on to something.  I also had a jar of Tropical Traditions Coco...

Easy Peasy Tuna Burgers

Image
I was looking for something easy to make for lunch on Sunday.  I reached for the canned tuna and was getting ready to make some quick tuna melts, but then had a brainstorm - Tuna Burgers . Instead of checking out recipes on pinterest, like I normally do, I took matters into my own hands and chanced it.    Easy Peasy Tuna Burgers - 2 cans drained tuna  - handful of panko  - 2 eggs there really are 2 eggs in there, I think the other one is under the panko 1.  mix ingredients in bowl 2.  form patties 3.  add oil to pan - I used the panini grill and preheat 4.  add patties, cook approx 5 minutes per side 5.  eat! with or without bread, with your favorite toppings, etc.        I actually chose to put them on some bulkie rolls, add a little mayo, swiss cheese, and greens.   my panini grill has been perfect for whipping up burgers and such Ward raved about these.   An...

Simple Black Bean Burgers

Image
Over the summer, I made some delicious black bean burgers.  The flavor was amazing and I remember them being so easy to make.  However, for some reason, I'm having a hard time finding that recipe.  I just started craving them again, I think because I'm craving summer to get here NOW.  I guess the black bean burgers will have to do.  This time, I got creative and came up with my own version of black bean burgers and I added in quinoa.  If you also want to try healthy cooking, there are online courses on culinary arts that can help you. Black Bean Quinoa Burgers ½ can black beans, rinsed & drained ½ c panko 1 sm egg ¼ c quinoa, 1 cup water (I used the tricolor from Trader Joes)  a handful of parmesan cheese spinach - prepare quinoa by rinsing first, then add to saucepan on stove with water and cook for about 10 minutes - while the quinoa is cooking, add the rest of the ingredients into a food processor - blend evenly until...

Riddle Me This

Image
Lynn, a Team Tough Chik  member came up with this awesome idea of putting together a weekly question called "Riddle Me This".  Last week I was swamped and didn't have time to respond to the question, but this week, I have nothing but time.  Gee, I wonder why?  What running rule(s) are you guilty of breaking? Oh my, how appropriate is this for me right now?  The general runners rule for running while sick is head cold - okay, fever/chest cold - stay home.  Well, ugh, we all know I completely ignored this rule.  I went out for my 10 mile run at the Midwinter Classic, because I'm stubborn and couldn't miss a race.  Now I have pneumonia.  While the dr. says it probably wasn't the race to pushed me to where I am now, part of me blames myself for still running on Sunday.  What's on the menu for me today?  I was able to throw together an incredibly easy soup today.  I had already done the prep wo...
