Strawberry Rhubarb Puffs

It's rhubarb time (well, in Maine anyway) and Ward and I are slightly addicted to rhubarb.  We love just about anything with rhubarb - jelly, muffins, crisp, pie.  



Lucky for me, Stacy hooked me up with 10 pounds of rhubarb.  Yes, I really do love it that much!  My goal for the day was the make rhubarb yummies and that I did.  

I started off with an experiment.  I was craving some kind of breakfast yumminess but didn't really know what exactly that was.   The only requirement was that whatever I made had to have rhubarb in it.  I also wanted whatever I made to be quick.  I didn't have a lot of time because I was going to be heading out for a run shortly.  



A quick glance in the refrigerator revealed some strawberries (that really needed to be used right away!)  and canned biscuits.  Those I could use for sure.  Now we're on to something. 




I also had a jar of Tropical Traditions Coconut Oil (that I am working on a review/giveaway for).  I could definitely use that in place of butter.  



Strawberry Rhubarb Puffs
  • 1 lb strawberries diced 
  • 1 lb rhubarb diced
  • 1 can of biscuits (really could be crescent rolls too or you could make your own)
  • 1/4 c raw sugar
  • 2 Tbs coconut oil
  • handful of walnuts (optional) 



1.  Dice the rhubarb & strawberry, toss into sauce pan with 1 Tbs of coconut oil and saute for approximately 5 minutes (mostly to soften the rhubarb - I wanted this to be a quick recipe!) & preheat oven to 400F.


2.  Roll out the biscuits



3.  Sprinkle some raw sugar & walnuts on rolled out biscuits


4.  Top the sugar & walnuts with a spoonful of the strawberry/rhubarb 




5.  Loosely roll up the sides and set onto a pan, baking dish or muffin tin.  I chose the muffin tin today because it was the first thing I saw.  


6.  Sprinkle more sugar & walnuts on top and bake for 8 to 10 minutes.  Then scoop them out with a spoon and enjoy!


I made this while Ward was still sleeping but apparently the delicious smell coming from the kitchen woke him up and he proceeded to devour these little bits of heaven.  He was a bit disappointed that I cheated by using canned biscuits, but got over it quite quickly.  

Next up - more rhubarb yumminess.  Strawberry/Rhubarb Jam, Apply/Rhubarb Jam & then I'll dice up some extra rhubarb and leave it in the refrigerator hoping that Ward will be so kind and make me some rhubarb scones while I'm out on my long run with the girls tomorrow.  I girl can wish, right?

  1. Yum! I don't have any rhubarb recipes but we used to go pick some down back at my parents' house. My mom would make strawberry rhubarb pie!

  2. I LOVE rhubarb!!! As a kid, I always used to dip in them sugar! Mmmm! My mom makes Rhubarb crisp and jam! Soooo good!

    Those puffs look DEEEE-licious!

  3. Love rhubarb and have forever. TheWife and I make a GREAT rhubard cordial (non alcoholic) that we drink instead of soda most of the year. But those puffs look absolutely delicious :-). We tried out a rhubarb chutney (something you would find at Slates) which I like a LOT!

    1. A rhubarb cordial - yum!!!! & thanks for the chutney idea. I have a cranberry chutney recipe and I could just swap the rhubarb in...or just head to Slates again. :) Do you eat the chutney over fish or chicken?

    1. I find rhubarb is a bitter taste to it - but with a bit of sugar, you get the bitter/sweet yumminess thing going on. Try it!!!!

    1. I know, right???? All of the puffs are gone though. & I already showed Ward the cut up rhubarb and expressed my desires.....let's hope he's feeling ambitious. Come on over!!! He'll have coffee ready too.
