Spring Storm? Make Rainbow Cupcakes!

When it's April 1st, and it's doing this outside....


The best way to brighten the day is to make these!


I really made them for dessert for tonight when we have our pasta dinner.



These Rainbow Cupcakes were super easy.
- 1 yellow cake mix
- follow directions on box - oil, eggs, water
- choose the colors you want with the food coloring you have in the house - I had purple, orange, blue and green
- separate the batter into 4 (or the amount of colors you want) containers - add food coloring and mix
- line cupcake pan with liners
- taking one color at a time, scoop some each color into the liners - do not mix!
- bake as directed

19 (or so) minutes later you get this!


The kids were begging for a taste of them, so I compromised and cut the tops off and let them eat the tops.



Then I frosted them with some Funfetti Frosting.  Why not?

Socks are very important to a runner.   If they rub you the wrong way, it will make for a very uncomfortable run.  Bunching up, toes too cold, too hot, rubbing - all things that can go wrong with a sock.  I'm sure there are some other scenarios I've left out. Running at night scares used to terrify me.  But, it all comes down to if I want to run I had to get over this fear.  Running in the darkness is my only option if I plan on running Monday through Friday since it’s dark before school and getting dark when I leave school and it’s going to be this way until mid February/March.  I supposed option B would be to rejoin the gym, but I really don’t want to spend the $$ and I don’t really enjoy the treadmill anymore.  So, outside it is! Tommie Rocks + Giveaway!

 A little over a month ago, Jordan from  Tommie Copper  sent me some Tommie Copper gear to sample.  I nearly peed my pants with excitement when the Tommie package came in the mail.  It was a gorgeous fall afternoon AND I had new gear to try out, so I pushed dinner back and made the executive decision to go for a run immediately.  Have you heard about Tommie Copper ?  This company is known for it’s compression gear that is infused with Copper.  So, why does Tommie use copper in it’s compression gear?  From what I gather, copper has been used medicinally for 1000’s of years.  Apparently copper stimulates the immune system to fight infections, repairs injured tissues and promotes healing.  Do you think if I outfitted myself in TC gear and wore it to school everyday, I would fight off those gross elementary kid germs?  I’m tempted to try that out.  Seriously.   Why do people even wear compression ge...
